A refreshing prawn and tuna salad packed with all the good stuff! I went all out with the toppings: creamy avocado, perfectly boiled eggs, crunchy carrots, sweet corn, tender chickpeas, crisp cucumber, and a sprinkle of salty feta. It was a vibrant, satisfying meal that didn’t just taste amazing but also felt light and healthy. The best part? It was only 3 WW Points, making it a guilt-free and diet friendly.
Start by washing your lettuce and chopping roughly
Lettuce - however much you want
Add salt and pepper to cleaned lettuce and toss through
Salt & Pepper
Add all other ingredients and top with Salad Dressing (see notes)

3 WW points are for the avocado and feta.** Salad dressing - I use many different ones, but our favourite is Fustini Balsamic Vinegar that our son and his wife bring back from the USA for us. It is AMAZING! However when we don't have this we love the Aldi Salad Dressing. Caramelised Raspberry is our favourite - 1 point for 5 ml. You don't need a lot as it is strong. I sometimes mix it with a bit of water to make it go further. It is quite thick.
