Instructions
Grease and line a 20cm cake tin
Add flours and sift
5 seconds | Speed 8 - set aside
125 gms Self Raising Flour,
125 gms Plain Flour
Place sugar, water, fruit, nutmeg, bicarb soda and butter into TM bowl and place on Simmer Basket
6 minutes | 110 degrees | Speed 1
200 gms Brown Sugar,
240 gms Water,
375 gms Mixed Dried Fruit,
1 tsp Nutmeg,
1 tsp Bi-Carb Soda,
250 gms Butter
Allow to cool for 5+ minutes
Preheat oven to 160 degrees
Add eggs and sifted flour
2 Eggs
20 Seconds | Speed 3
Final mix with spatula to make sure everything is combined
Pour into cake tin
Bake at 160 degrees for 1 hour (50 mins if Fan Forced)
Insert skewer to checked to see if it is cooked
