Strawberry, Lemon & Buttermilk Sorbet

Chris just had to create his own recipe!

In our home, Ice-Cream is the BE ALL and END ALL to Chris. I remember one morning waking up and he had decided to have a reverse day. Start at Dessert and work backwards. Ice Cream for breakfast!

We liked the Cookidoo recipe, however  decided to make a few changes of our own. We didn’t like the “bits” in it – well I didn’t and it was far too sweet for us. The strawberries (or similar fruit) had enough of it’s own sweetness, so began the experiments and we think we have it down pat!

This is a recipe that Chris developed from a Cookidoo recipe. We like the Cookidoo one but LOVE this one all the better!

Ingredients
  

  • 1 Lemon zest NO pith
  • 500 g Frozen Strawberries
  • 350 ml Buttermilk (1.5 cups)
  • 1 tsp Vanilla Essence Don't use fake essence - tastes no where near as good
  • 75 g Monk Fruit Using monk fruit extract makes this reasonably “guilt free". You can use raw or white sugar, but you will need to use around 125g. You can also, try out other sweeteners such as Stevia etc.

Make Your Own Buttermilk

  • 1.5 tbsp Lemon Juice
  • 350 ml Milk Longlife milk lasts longer in the freezer

Instructions
 

  • Place zest and monk fruit extract in bowl
    Measuring Cup IN (MC)- Speed 9 | 5seconds - Scrape down sides
    Repeat another 2 times
  • Add Strawberries and Vanilla Essence
    MC IN - Speed 8 | 5 seconds - Scrape down sides
    Repeat another 1 time
  • Add buttermilk
    MC OFF - 1 Minute | Speed 5 – Insert TM Spatula (with guard) and stir around the sides to ensure a good mix
  • Pour into freezer proof container and freeze for 30 – 60 minutes before serving

Notes

If using this after 24 hours - make sure you remove from freezer approximately an hour prior to serving, unless of course you like HARD Sorbet.
Remember, this recipe has no sugar to soften the freezing process.
Should keep in the freezer for 2 to 3 weeks but it never lasts that long in this house to test it properly.
