Annas Italian Rice Bake



Anna's original recipe on her website for Beef and Rice bake is one of her most popular ones. The stats on it are AMAZING! (yes I made her site, so I am privilege to see things like that)

This recipe is taken from Anna Van Dyken's Book #2 - How I've Kept The Weight Off - Page 138.  Fantastic Book with amazing recipes

Any recipe that Anna has created is amazing to me and this Italian Rice Bake is no different.

Once again - my Thermomix had to come into it and this is super super easy this way.

Below is Annas recipe for her Beef & Rice Bake.

Cheese and Bacon Rolls - Plain

Italian Rice Bake

  • Lean Pork Mince
  • Brown Onion
  • Garlic Cloves
  • Arborio Rice
  • Balsamic Vinegar
  • Diced Tomatoes
  • Tomato Paste
  • Flat Leaf Parsley
  • Italian Herbs
  • Beef Stock
  • Mozzarella Cheese
  1. Add Garlic & Onions

    Put on lid with MC Cup

    4 Seconds | Speed 5

  2. Scrape down the bowl

    Add Pork (broken up)

    Put on lid and Simmer Basket

    5 mins | Varoma | REVERSE | Speed STIR

  3. Add tomatoes, rice, vinegar, tomato paste, herbs and stock

    Put on lid and Simmer Basket (This does splatter)

    15 mins | 100 degrees | REVERSE | Speed 2

  4. Transfer to a dish, top with Mozzarella

    Cover with foil and bake for 35 mins

    Uncover and then bake for another 10 mins
