WW Dark Chocolate & Chickpea Cookies

Every night I look for something sweet with my cup of tea, however being on WW doesn’t allow me to indulge like I used to – hmmm maybe that is why I’m doing WW (Weight Watchers) 
 
Last night I watch the Healthy Life Awards 2022 with WW. Danielle Takoko won the highest honour (Congrats – so well deserved!!) She mentioned Dark Chocolate and Chickpea Cake and I thought WAIT – The sounds like bliss to me. So this morning I logged into WW and looked for the recipe and found the cookies! Perfection, but as everyone knows, I love my Thermomix.
 
So today I went on a little journey and made these amazing cookies IN MY THERMOMIX!! 👏🏻
 
These are really tasty. I was a little worried as chickpeas are not my favourites but oh yum! Simply yummy 😋

What's Needed

  • Thermomix
  • Oven
  • Baking Trays
This is a free WW recipe that I have converted to Thermomix

Ingredients
  

  • 125 gms Canned chickpeas rinsed and drained
  • 30 gms Smooth or crunchy peanut butter
  • 1 tsp Vanilla essence
  • 3 Fresh dates pitted
  • 1 Egg
  • 1 tsp Canola oil
  • 20 gms Walnuts
  • 25 gms Dark chocolate

Instructions
 

  • Add Dark Chocolate and Walnuts to TM bowl
    Place lid on Bowl with MC
    Turbo 1 Second
    Transfer to small bowl and set aside
    25 gms Dark chocolate, 20 gms Walnuts
  • Without rinsing bowl (gosh I love that)
    Add dates - halved and pip removed. Vanilla essence, Peanut Butter and chickpeas
    5 seconds | speed 6
    Scrape the sides of the bowl
    125 gms Canned chickpeas, 30 gms Smooth or crunchy peanut butter, 1 tsp Vanilla essence, 3 Fresh dates
  • Add Egg, oil and salt
    5 seconds | speed 5
    Scrape the sides of the bowl
    1 Egg, 1 tsp Canola oil
  • Add half the amount of nuts & Choc - I added it all. I hate fuss.
    3 seconds | REVERSE | Speed 3
  • I made mine into 1 tsp only and it made double the amount. 24.
    I baked for 12 mins. Perfect
