Thermomix Celery Soup

My forever “go-to” soup when I’ve got leftover celery tops hanging around. Yep – the leaves, the bits you usually chuck in the bin, or sacrifice to stock paste – they all go in. And the result? Crazy tasty. I’m obsessed.

ZERO WW Points and only 107 Calories! No glam food pics today – it’s just too good to stop and pose. Sorry, soup doesn’t sit still for a photo shoot.

Confession: I cannot believe this recipe wasn’t already on my site. The other day I went to make it and thought, “Hang on… where did I put it?!” Answer: nowhere. So here it is at last. It’s the perfect speedy lunch or a cheeky starter before dinner. Plus, it’s celery-saving magic – no more wasting those leafy tops!

Big shout-out to my friend Sue Forbes, who shared this gem with me MANY years ago. You’re a legend, Sue. 🥰 Oh, it is also Daniel’s favourite soup!

Ingredients
  

  • Celery - I use the tops and stalks. However much you want really 1 litre Water
  • 2 tbsp Stock - Veggie or chicken stock
  • 1 onion
  • 1 tsp black pepper
  • Chilli optional
  • 1 Litre Water must cover all ingredients

Instructions
 

THERMOMIX

  • Roughly chop Celery and add to bowl
  • Quarter 1 onion and add to bowl
  • Put on lid and MC - 5 sec/speed 5
  • Scrape down the bowl and add 2 tbsp water
  • Put on lid and Simmer Basket - Sauté 2 min/ Varoma/speed 1
  • Add 1 litre Water
  • Add 2 tbsp Stock - Veggie or chicken stock and black pepper
  • Cook 20 min/100°C/speed 1
  • Replace Simmer Basket with MC
  • 1 min/speed 1 and slowly increase to speed 9

STOVE TOP

  • Chop Celery and onion. Place in large saucepan.
  • Add water, stock and black pepper
  • Cook for about 20-30 minutes
  • Blend with stick blender

ZERO WW Points | 107 Calories
You can add a tbsp of sour cream, yoghurt or cream. Just remember to point it.
