My Mum would always make Egg & Bacon Pie on the weekends for lunch and lunch boxes. When we got older, we all knew how to make them, but Mum would give us one to “take home”. It was very special to all of us.
I decided to make these little bite size ones for parties etc or even for lunches. They are great in kids lunch boxes too.
Party Egg & Bacon Pies
What's Needed
- 1 Thermomix
- 1 Oven
- Mini Muffin Tray
- Circle Cutter
- Pastry Shaper from TheMixShop Not essential, just handy
Imagine the pies that Mum used to make in bite size pieces. Yes, sounds good doesn't it. Well this is exactly what these are - mini sized!

Ingredients
- 1 tsp Parsley
- 110 gms Tasty Cheese
- 110 gms Bacon - diced I prefer them diced small
- 1 egg
- 3 Sheets Puff Pastry Thawed
- Salt & Pepper to Taste What really does that mean - to me - 1/2 teaspoon of each
Instructions
- Pre-Heat oven to 220 degrees (Mine is fan forced)
- Place into Thermomix bowl1 tsp - Parsely 110g - Tasty CheesePlace lid on TM bowl - 7 Seconds | Speed 8
- Add 100g Bacon - diced small1 EggMix 20 Seconds | REVERSE | Speed 1You can use the Thermomix spatula through the lid to assist with incorporating ingredients.
- Place sheet of pastry and cut circle shapes which will fit into your mini muffin trays.
- Press the pastry into the mould - I use the pastry shaper from The Mix Shop. I swear by this tool for so many pastry things I make. The original purpose was for Portuguese Tart pastryLink Below
- Place a teaspoon of mixture into the pastry and cook for 12 minutes until golden brown
Notes
I Like to add the bacon to the bowl when I am chopping the cheese and onion - but it does mash the bacon. It really is an individual choice. Me = Quicker the better.
