Amazing fresh tasting food – All in the Thermomix

We love everything fresh and tasty. Fish is our go to quick meal. I was making the Cookidoo Fish & Veggie Parcels but oh that was so time consuming and fussy.

So I decided to change it up and also use chicken once in a while. Both came out incredibly well.

Before I had a steaming dish, I used baking paper.

A quick hint: WET the baking paper before placing it in the Varoma – it shapes better. This works for every recipe that calls for baking paper!!

We hope you like this meal as much as we do. If you don’t like lemon, substitute it for soy sauce. Just as yummy!

What's Needed

  • Thermomix
  • Steaming Tray (optional)
  • Baking Paper
This is a take on Thermomix Fish & Mixed Vegetable Parcels. Whilst the parcels are great, they are so fiddly and time consuming, plus I think this has much more flavour and you can change it all around to suit your protein!! Win win in my books.

Ingredients
  

Lemon & Parsley Oil

  • 40 g extra virgin olive oil
  • 1 tsp salt
  • ½ tsp ground black pepper
  • 2 tbsp grated lemon zest
  • 50 g lemon juice - approx. 1 lemon
  • 6 sprigs fresh flat-leaf parsley - leaves only
  • 1 Chili - optional

Protein & Veggies

  • 4 White fish fillets - 120-200 g each (barramundi, pink ling, whiting)
  • 2 Chicken breast cut horizontally
  • 200 g mixed vegetables e.g. carrots, zucchini, celery stalks, turnip, cut into pieces
  • 500 g water
  • 400 g potatoes - peeled, cut into slices (3 mm)

Instructions
 

  • Add to mixing bowl ½ tsp of the salt, ¼ tsp of the pepper, grated lemon zest, lemon juice & Parsley
    10 SECONDS | SPEED 5 - then set aside in small bowl
    No need to rinse bowl - don't we just love this!
    40 g extra virgin olive oil, 1 tsp salt, ½ tsp ground black pepper, 2 tbsp grated lemon zest, 6 sprigs fresh flat-leaf parsley - leaves only, 50 g lemon juice - approx. 1 lemon
  • Place vegetable into bowl weighing approx. 200g - mind you ours always goes WAY over - we love veggies
    5 SECONDS | SPEED 5
    200 g mixed vegetables e.g. carrots, zucchini, celery stalks, turnip, cut into pieces
  • FOR FISH
    Place Fish fillets onto steaming tray or baking sheet (remember, we need the steam to get through so place a trivet or bamboo sticks underneath for steam) in the Varoma - I use TOP tray.
    Place the vegetables on top of fish and pour half the amount of lemon & parsley oil over the vegetables.
    4 White fish fillets - 120-200 g each (barramundi, pink ling, whiting)
  • FOR CHICKEN
    Add chicken to bottom tray on baking sheet (remember, we need the steam to get through so place a trivet or bamboo sticks underneath for steam)
    In top tray add veggies and pour half the amount of lemon & parsley oil over the vegetables. Don't worry - it will run through and season the chicken
    *Why don't I put them together like the fish? Easy - we need to make sure the chicken is steamed through. Fish can be under - Chicken CANNOT!!
    2 Chicken breast cut horizontally
  • Place water into mixing bowl, insert simmering basket and weigh potatoes into it. Place Varoma into position, secure Varoma lid and steam 
    25 MINUTES | VAROMA | SPEED 1
    The fish will be cooked - just double check your chicken - it always has been for us, but if there is a thick piece of the breast - always best to check.
    500 g water, 400 g potatoes - peeled, cut into slices (3 mm)
  • Ready to serve.
    Drizzle with the reserved lemon-parsley oil.
    Season potatoes with salt and pepper and serve

Notes

  • If you don't like lemon, substitute it for Soy sauce
  • We use Season Me Good seasonings on the protein also - their Pixie Dust for the vegetables and Tuscan for the fish/chicken (we are not affiliated with Season Me Good in any way - we just LOVE their seasonings)
