This is our take on Minestrone Soup
and there are 1000’s of variations our there. Change it up to suit yourself.
Everything about winter to me SCREAMS – SOUP!! And this winter is no different.
Tomato Soup – OMG the one on Cookidoo is amazing – Move over Mr. Heinz – Cookidoo
Scotch Broth – YUM – Cookidoo
and of course everyones favourite – Hug In A Mug Chicken Soup – Cookidoo – the only thing I don’t like about this is the smell of it cooking. I don’t know but…. No! Taste is incredible – as long as I don’t have to smell it – hahaha
This is our Minestrone – Enjoy. Serves with freshly baked bread and oh I am in Heaven! Thanks Chris – he is the bread king in our home.

There are so many variations of this soup out in the wide world. Everyone has their own version. This is a combination of mine, my sisters and of course, my Mums. If you leave out the bacon which I often do, the points reduce to 3 WW Points

Ingredients
- 1 Onion - brown peeled, quartered
- 2 Garlic Cloves
- 50 g Bacon - thin slices optional - reduces points to 3 if not used
- 20 g Olive Oil
- 90 g Carrots - sliced
- 50 g Celery - sliced
- 120 g Potatoes Carisma for WW
- 400 g Chopped/Crushed Tomatoes 1 Can
- 550 g Water
- 2 tbsp Vegetable Stock
- 1/4 tsp Black Pepper
- 400 g Kidney Beans - drained & rinsed
- 60 g Dry Pasta
- 100 g Zucchini - diced chunky
- 150 g Water
- 1 tsp lemon juice
- 1 Pinch Sea Salt
- 1 Pinch Pepper
- Parmesan Cheese - Grated Optional
Instructions
- 1 Onion - brown, peeled, quartered & 2 Garlic Cloves1 Onion - brown, 2 Garlic Cloves
- Place on Lid & MC Cup 4 sec/speed 5
- Scrap Down Sides and add 50g Bacon - thin slices, 20g Olive Oil50 g Bacon - thin slices, 20 g Olive Oil
- Place on Lid - MC Cup OFF - 5 min/100°C/speed 1
- Add Carrots - sliced, Celery - sliced, Potato - cubed, Tomatoes (1 Can), Water, Vegetable Stock, Black Pepper90 g Carrots - sliced, 50 g Celery - sliced, 120 g Potatoes, 400 g Chopped/Crushed Tomatoes, 550 g Water, 2 tbsp Vegetable Stock, 1/4 tsp Black Pepper
- Place lid on with Simmer Basket on top - 15 min | 100°C | speed 1
- Add Kidney Beans - drained & rinsed, Dry Pasta, Zucchini - diced chunky, lemon juice400 g Kidney Beans - drained & rinsed, 60 g Dry Pasta, 100 g Zucchini - diced chunky, 1 tsp lemon juice
- Top up with water ENSURING, not to exceed maximum fill line150 g Water
- Place lid on with MC 12 min | Varoma | speed 1
- Season with Salt & Pepper1 Pinch Sea Salt, 1 Pinch Pepper
- Top Grate Parmesan Cheese (Optional) Remember to point the cheese!!Parmesan Cheese - Grated
