Mum’s LCM Bars
LONG before LCM Bars were a “thing” my Mum used to make for us kids these Caramel Rice Bubble Bars. We just loved them. They were a real treat for our lunch boxes.
When I had my own kids and LCM bars arrived on the shelves, they were used to my bars. They tried an LCM once and didn’t like it. They said it tasted “funny” and got stuck in their neck.
So glad to know that my Mum’s was a winner!
With a grandchild here, I pulled out the old recipe book and decided to start converting.
Today I thought I would start with this recipe as Billy (granddaughters Daddy) loves LCM Bars. It is really a sticky recipe but gosh – in a thermie – super easy! I have put Thermomix and Conventional ways below.

Caramel Rice Bubble Bars - Thermomix Version
Ingredients
- 60 gms Butter
- 300 gms Marshmallows
- 125 gms Jersey Caramels
- 160 gms Rice Bubbles
Instructions
- Line a 20 x 20cm pan with baking paperHint: Wet the baking paper - scrunch into a ball - shake it off and line tray - it shapes easier.
- Add Butter & Marshmallows60 gms Butter, 300 gms Marshmallows
- Place lid on TM Bowl with MCChop 10 Seconds | Speed 8
- Melt ingredients - place lid on Thermomix bowl - NO MC5 Mins | 80 degrees | Speed 3
- While this is melting butter and Marshmallow slowly add chopped Jersey Caramels through the lid. Add more time if needed125 gms Jersey Caramels
- Add Rice Bubbles Mix - 2 minutes | Speed 2 | REVERSE160 gms Rice Bubbles
- Tip all ingredients into tray and press down firmly. I like to use wet hands to do this. Much easier than everything sticking to the spoon.
- Refrigerate for at least 30 mins - Cut into squares - ENJOY!
Caramel Rice Bubble Bars - Conventional Version
Ingredients
- 3 tbsp Butter
- 300 gms Marshmallows
- 125 gms Jersey Caramels
- 6 Cups Rice Bubbles
Instructions
- Line a 20 x 20cm pan with baking paperHint: Wet the baking paper - scrunch into a ball - shake it off and line tray - it shapes easier.
- Melt butter, jersey caramels and marshmallows together in pot on cooktop
- Place rice bubbles into a large bowl
- Pour melted mixture into rice bubbles and mix thoroughly AND QUICKLY
- Tip all ingredients into tray and press down firmly. I like to use wet hands to do this. Much easier than everything sticking to the spoon.
- Refrigerate for at least 30 mins - Cut into squares - ENJOY!
