Almond, Lemon & Herb Crusted Fish



We love fish of any kind, but sometimes you want to lift it up a bit with something different.

Yes we could have chosen bread crumbs but almonds are great for a crust. Here is our result.

I managed to get this to MY WW friendly points – 4PP for me 🙂

Ingredients
  

  • 4 Fish Fillets - any white fish
  • 1 Lemon
  • 80 gms Raw Almonds
  • 1 tsp Onion Powder
  • 4 Sprigs Parsley
  • Salt & Pepper (to taste)
  • 3 sprays Olive Oil
  • 10 gms Olive Oil

Instructions
 

  • Preheat oven at 200 degrees fan forced
  • Take the Zest from your lemon and add it to the bowl with the Almonds, Parsley, Salt & Pepper
    1 Lemon, 80 gms Raw Almonds, 1 tsp Onion Powder, 4 Sprigs Parsley, Salt & Pepper (to taste)
  • Blitz 6 seconds | Speed 6 - if you want a finer crumb - go again
  • Pat down the fish so its semi dry and spray lightly with olive oil spray ( I have a squeeze bottle trigger for my olive oil)
    4 Fish Fillets - any white fish, 3 sprays Olive Oil
  • Place the fillets on a lined baking tray.
  • Spread the crumb on top of the fillets and press down
  • Bake in oven for approx 10 minutes. Depending on the thickness of your fish
  • When removed from oven drizzle a tiny amount of olive oil - just a smidge
    10 gms Olive Oil
