Tex-Mex Soup the ThermoCouple Way



When it comes to quick, wholesome meals, my Thermomix soup recipes are always my go-to. They’re comforting, nourishing, and perfect for busy days—and best of all, they can be made Weight Watchers–friendly too!

I wanted to experiment with new soup ideas, but most of the recipes I found weren’t exactly weight-loss friendly—beautiful on the surface, but not when you looked at the ingredients or points.

So, I got creative in the Thermomix and worked a little recipe magic of my own. The result? A delicious, satisfying bowl that fits perfectly into my Weight Watchers plan—just 3 points for me! 🙌

Cheese and Bacon Rolls - Plain

Tex-Mex Soup

This was originally a Cookidoo recipe, however, I wanted a healthier more WW Friendly version so I changed this recipe a lot. Well the ingredient amounts and the type of protein.

  • 500 g chicken breast (cut into pieces (approx. 2-3 cm))
  • 1 ½ - 2 tbsp taco seasoning (see Tips)
  • 80 g onion (cut into halves)
  • 1 garlic clove
  • 1 - 2 jalapeño chilli (trimmed and cut into halves, deseeded if preferred)
  • 20 g extra virgin olive oil
  • 150 g red capsicum (cut into pieces (approx. 1 cm))
  • 400 g canned chopped tomatoes
  • 1 tsp Chicken stock paste (see Tips)
  • 650 g water
  • 20 g grated cheddar cheese (to serve)
  • 1/2 avocado (flesh only, sliced, to serve)
  • 1 tsp sour cream (to serve per bowl)
  1. Place Varoma into position and weigh chicken into it.
  2. Add 1 tablespoon of the taco seasoning and mix to combine. Set aside.

  3. Place onion, garlic, chilli and oil into mixing bowl and Chop 3 sec | Speed 5

  4. Scrape down sides of mixing bowl with spatula and Cook 3 min | 120°C | Speed 1 (TM31: 3 min/Varoma/speed 1).

  5. Add capsicum, tomatoes, stock paste, water and remaining ½ - 1 tablespoon of the remaining taco seasoning. Place Varoma into position, secure Varoma lid and Steam 20 min | Varoma | REVERSE | Speed 1.

  6. Remove Varoma and set aside. Divide soup between 4 bowls. (I put it in a thermoserver to wait for the chicken)

  7. Place reserved chicken into mixing bowl and Shred 4 sec | REVERSE | Speed 4.

  8. Add chicken to server and share between the 4 bowls, top with cheese, sour cream, sliced avocado
