I am a shocker when it comes to breakfast. I don’t think my brain is awake enough to work out what to have. These are so quick. Pop it on a plate. A couple of spoons of yoghurt and some berries. Yummo. I’m set for the week, well half the week – Chris loves them too.

Any recipe that Anna has created is amazing to me and this Italian Rice Bake is no different.
Once again – my Thermomix had to come into it and this is super super easy this way.
Anna’s Berry Breakfast Bars

- 2 eggs
- 100 g quick oats
- 1 tsp baking powder
- 170 g 99% fat-free plain yoghurt
- 1 tsp lemon zest optional
- 2 tsp pure maple syrup
- 2 tbsp unsweetened almond milk
- 1 tsp vanilla essence
- 160 g mixed berries
- 1 tsp ground cinnamon
Instructions
- Add butterfly whisk to bowl then egg whites30 Seconds | Speed 3.52 eggs
- Set aside - these will deflate but just mix together later.
- Add all ingredients (except egg whites and fruit)5 Seconds | Speed 4100 g quick oats, 1 tsp baking powder, 170 g 99% fat-free plain yoghurt, 1 tsp lemon zest, 2 tsp pure maple syrup, 2 tbsp unsweetened almond milk, 1 tsp vanilla essence, 1 tsp ground cinnamon
- Add egg whites and fruitEither stir through or 5 Seconds | REVERSE | Speed 4160 g mixed berries
- Bake for 20–25 minutes, until a skewer inserted into centre comes out clean. Set aside in tray for 5 minutes before turning out onto a wire rack to cool. Serve.
