Anna’s Berry Breakfast Bars

I am a shocker when it comes to breakfast. I don’t think my brain is awake enough to work out what to have. These are so quick. Pop it on a plate. A couple of spoons of yoghurt and some berries. Yummo. I’m set for the week, well half the week – Chris loves them too.

This recipe is taken from Anna Van Dyken’s Book #2 – How I’ve Kept The Weight Off – Page 50.  Fantastic Book with amazing recipes

Any recipe that Anna has created is amazing to me and this Italian Rice Bake is no different.

Once again – my Thermomix had to come into it and this is super super easy this way.

Ingredients
  

  • 2 eggs
  • 100 g quick oats
  • 1 tsp baking powder
  • 170 g 99% fat-free plain yoghurt
  • 1 tsp lemon zest optional
  • 2 tsp pure maple syrup
  • 2 tbsp unsweetened almond milk
  • 1 tsp vanilla essence
  • 160 g mixed berries
  • 1 tsp ground cinnamon

Instructions
 

  • Add butterfly whisk to bowl then egg whites
    30 Seconds | Speed 3.5
    2 eggs
  • Set aside - these will deflate but just mix together later.
  • Add all ingredients (except egg whites and fruit)
    5 Seconds | Speed 4
    100 g quick oats, 1 tsp baking powder, 170 g 99% fat-free plain yoghurt, 1 tsp lemon zest, 2 tsp pure maple syrup, 2 tbsp unsweetened almond milk, 1 tsp vanilla essence, 1 tsp ground cinnamon
  • Add egg whites and fruit
    Either stir through or 5 Seconds | REVERSE | Speed 4
    160 g mixed berries
  • Bake for 20–25 minutes, until a skewer inserted into centre comes out clean. Set aside in tray for 5 minutes before turning out onto a wire rack to cool. Serve.
