Thermomix Chicken & Vegetable Stir Fry

In our house, anything stir fry goes down a treat. I love the ease of it. The taste of it, the use of using left over vegetable. It just great.

I serve ours with boiled rice. Usually the left over rice from another night that I have frozen. I either just microwave the rice quickly or throw it in a fry pan with some egg, bacon, salt and pepper and I’m done.

  • Thermo Server
Stir Fry's of any kind we just love. We have it to "empty the fridge" before shopping. It's great for all those bits of veggies you have left.
We also like this with Beef - see notes for how to with the beef as you do not cook it as long as the chicken

Ingredients
  

  • 500 gm Chicken Breast Cubed (for Beef, see notes)
  • Salt/Pepper to taste
  • 500 gm Mixed Veggies Zucchini, Carrots, Broccoli, Capsicum
  • 225 gm Mushrooms
  • 1 tbsp Olive Oil
  • 1 tbsp Olive Oil
  • 3 garlic cloves
  • 1 tbsp ginger

Sauce

  • 2 tsp sesame oil or replace with avocado/grapeseed
  • 80 ml Low Sodium Soy Sauce
  • 1 tbsp Brown Sugar
  • 240 ml Chicken/Veggie Stock
  • 30 gm Plain/Gluten Free Flour

Instructions
 

  • Add chicken, salt & pepper, 1 tbsp oil to TM Bowl
    500 gm Chicken Breast, Salt/Pepper to taste, 1 tbsp Olive Oil
  • Put on lid and place simmer basket onto lid
    10 min | Varoma | REVERSE | Speed STIR (I occasionally turn to speed 1)
  • When finished get your TM Spatular and Scrape base of mixing bowl well with spatula to loosen any caramelisation and transfer to a Thermo Server to keep hot.
  • In the same bowl add garlic, ginger
    3 garlic cloves, 1 tbsp ginger
  • Chop 8 Sec | Speed 7
  • Scrape down sides of mixing bowl well with spatula
  • 1 tbls oil
    1 tbsp Olive Oil
  • Mushrooms and Veggies
    500 gm Mixed Veggies, 225 gm Mushrooms
  • Put on lid and place simmer basket onto lid
  • 5 mins | Varoma | REVERSE | Speed STIR
  • Transfer to ThermoServer
  • Add remaining ingredients
    2 tsp sesame oil or replace with avocado/grapeseed, 80 ml Low Sodium Soy Sauce, 1 tbsp Brown Sugar, 240 ml Chicken/Veggie Stock, 30 gm Plain/Gluten Free Flour
  • Put on lid and place simmer basket onto lid
  • 3 mins | 100 | Speed 3.5
  • RETURN Chicken & Veggies to TM Bowl
  • Put on lid and place simmer basket onto lid
  • 2 mins | Varoma | REVERSE | Speed STIR
  • Serve with Rice or Noodles

Notes

We recommend running the Browning Pre-Clean mode at the end of the recipe to easily remove any leftover caramelisation on the bottom of the mixing bowl.
FOR BEEF instead of Chicken
  1. Add Beef and 1 tbsp oil to TM Bowl
  2. Cook 4 min | 100°C | REVERSE | Speed 1
  3. Transfer to Thermo Server and season with salt and pepper
