Mum's Shepherds Pie Stew
This recipe always makes me feel "home" and that Mum is close by. I always feel her standing over my shoulder when I make it. My daughter loves it too.
It was great when the kids were little - I would "cook the hell out of it" so all the veggies disappeared into sauce and I knew that they were getting a bowl of goodness and love.

- Once cooked add to ceramic baking tray
- Place mashed potatoes onto the top. Sprinkle with cheese and bake for 25 mins or until golden
I have mentioned certain vegetables, but I just use WHATEVER is in my fridge at the time. You can be the judge.Â
- Any hard vegetable, chop with the carrots etc.Â
- Any soft vegetable, put in when the broccoli is due to be put in.

All ready after 25 mins. I cooked mine a little less as it was cooked early and ready for reheating in the oven later.
