Mum's Stew Shepherd's Pie

My Mum's stew in a Thermomix - couldn't be easier.
This recipe always makes me feel "home" and that Mum is close by. I always feel her standing over my shoulder when I make it, or maybe that is wishful thinking.
It was great when the kids were little - I would "cook the hell out of it" so all the veggies disappeared into sauce and I knew that they were getting a bowl of goodness and love. Now all I have to do is blitz the veggies and it is all hidden away if need be.

Ingredients
  

  • 30 gms cheese any type - tasty, mozzarella or a blend
  • 1 carrot
  • 1 stick Celery
  • 1 zucchini
  • 2 Cloves Garlic
  • 1 large brown onion Quartered
  • 20 g Olive Oil
  • 500 g mince beef
  • 3 tbsp Corn Flour
  • 3 tbsp water
  • 2 tbsp TM vegetable stock
  • 1 tbsp Tomato Paste
  • 2 tbsp worcestershire sauce
  • 1 tsp Maggi Seasoning Sauce
  • 100 gms Mushrooms Optional
  • 80 gms broccoli florets roughly chopped
  • 80 gms corn kernels drained
  • 4 Potatoes

Instructions
 

  • Add cheese to TM Bowl - place on lid and MC
    30 gms cheese
  • 5 sec | Speed 5 - set aside (small bowl)
  • Add carrot and celery to TM bowl - place on lid and MC
    1 carrot, 1 stick Celery
  • 5 sec | Speed 5 - set aside
  • Add zucchini to TM bowl - place on lid and MC
    1 zucchini
  • 3 sec | Speed 4 - set aside
  • Add large brown onion and Cloves Garlic to TM bowl - place on lid and MC
    2 Cloves Garlic, 1 large brown onion
  • 5 sec | Speed 5
  • Add Olive Oil to TM - place on lid and Simmer Basket
    20 g Olive Oil
  • 3 min | Varoma | REVERSE | Speed 1
  • Add "set aside" Carrot & Zucchini
  • Place on lid and Simmer Basket
  • 3 min | Varoma | REVERSE | Speed 1
  • Add mince beef (broken up) to TM Bowl
    500 g mince beef
  • Place on lid and Simmer Basket
  • 5 min | 100°C | REVERSE | Speed 1
  • Stir with Spatula to mix all things together breaking up and chunky bits
  • Add Corn Flour mixed with water - add to TM bowl
    3 tbsp Corn Flour, 3 tbsp water
  • Add vegetable stock
    2 tbsp TM vegetable stock
  • Add Tomato Paste
    1 tbsp Tomato Paste
  • Add worcestershire sauce
    2 tbsp worcestershire sauce
  • Add Maggi Seasoning Sauce
    1 tsp Maggi Seasoning Sauce
  • Add Mushrooms (Optional)
    100 gms Mushrooms
  • Add broccoli florets
    80 gms broccoli florets
  • Add corn kernels, drained
    80 gms corn kernels
  • Mix together with Spatula and put on lid and place steam basket in position
  • 25 min | 100°C | REVERSE | Speed 2.5
  • Meanwhile, Preheat oven to 180 degrees fan forced.
  • Put potatoes on to boil - stove top - you can place them in the Varoma and steam them - but they do take longer than the cook UNLESS you cut them up very small pieces
    4 Potatoes
  • Once cooked add to ceramic baking tray
  • Place mashed potatoes onto the top. Sprinkle with cheese and bake for 25 mins or until golden

Notes

I have mentioned certain vegetables, but I just use WHATEVER is in my fridge at the time. You can be the judge. 
  • Any hard vegetable, chop with the carrots etc. 
  • Any soft vegetable, put in when the broccoli is due to be put in.

All ready for the 25 minute cook. This is where you set your oven and cook those potatoes

Place in your baking dish ready for the potatoes and cheese

Dollop on the potatoes and spread with a fork as best as you can, then sprinkle with cheese.

All ready after 25 mins. I cooked mine a little less as it was cooked early and ready for reheating in the oven later.
