I don't know about others, but omelettes are my quick and easy go to.
I have always cooked them in a fry pan, but when I tried this way - OMG - they are so light and fluffy.
I tried it with the Thermomix thinking it wouldn't work. That they would be dry and chewy. My word. Not at all.



Omelette in a Thermomix
I have set out a list of ingredients. All are personal choice. The eggs and milk
The vegetables are whatever you want to put in. Sometimes I also put in small pumpkin pieces, shredded carrot, cabbage, potato.
- Thermomix
- Alyce Alexandra Silicone Mat
- Baking Paper
- 500 ml Water
- 3 Olive oil spray
- 2 Eggs
- 2 tbsp milk
- 1 stalk celery - I include leaves
- Baby Spinach - handful
- Tomato
- Capsicum
- Zucchini
- Cheese - parmesan, cheddah, mozzarella (your choice)

Fill TC bowl with 500ml water.

Place lid on, and top with steaming tray / Varoma. Place tray into Varoma

Add AA Steaming Mat (if you have)

If no mat - get a piece of baking paper and wet and scrunch it up and shake off excess water. Lay flat onto varoma tray

Spray 2-3 sprays of olive oil

In a separate bowl, gently beat eggs and milk of choice (or water)

Add vegetables evenly over tray

Pour over egg mixture

Sprinkle with cheese if wanted
