Anna’s Cheesy Potato & Bacon Bake

I just had to make this for my weekly lunches. I NEEDED something delicious, and this recipe is exactly that!!

Anna, this is amazing, but you know me – I HAD to convert it to Thermomix 😝

The photo shows the dish straight from the fridge, as we made it on Monday using our Thermomix, and it will be our lunches for the next few days. It’s so good! I enjoyed mine heated in the microwave for 30 seconds, but Chris preferred his cold. We both LOVED it 🥰

What's Needed

  • Thermomix
  • Baking Tray 25x25
  • Oven

Ingredients
  

  • 300 g low carb potato I used 400g after the liquid was removed it was 300g
  • 60 g Parmesan cheese
  • 55 g 50% less fat grated cheese
  • 100 g short cut bacon diced
  • 3 spring onion finely sliced
  • 6 large eggs
  • 1/2 cup low fat cottage cheese
  • 2 tsp mixed dried herbs
  • Salt & Pepper to taste

Instructions
 

  • Add diced potatoes to TM Bowl
  • Put on lid and MC
    5 Seconds | Speed 5
  • Then tip into a tea towel and squeeze all excess liquid out - you want 300g after the liquid is gone.
  • Rinse and dry bowl - add both cheeses
  • Put on lid and MC
    7 Seconds | Speed 7
  • Add Potatoes back to the bowl and add all other ingredients.
    20 seconds | REVERSE | Speed 4
  • Line a 25x25 square baking dish with baking paper.
  • Pour mixture into dish and bake for 20-25 minutes at 180c

    Looks delicious but what could you use instead of cottage cheese?

      Hi Paula, use could use Fat Free Greek Yoghurt but it will be a little more tangy, or Low Fat Ricotta Cheese but remember, that is pointed – Approx 2 WW Points. If you don’t like the texture of cottage cheese, pop it in a blender to make it creamy – however in the bake, you don’t notice the texture at all 🙂 Let me know how you go. Sue
