I am a shocker when it comes to breakfast. I don’t think my brain is awake enough to work out what to have. These are so quick. Pop it on a plate. A couple of spoons of yoghurt and some berries. Yummo. I’m set for the week, well half the week - Chris loves them too.

Any recipe that Anna has created is amazing to me and this Italian Rice Bake is no different.
Once again - my Thermomix had to come into it and this is super super easy this way.
Anna’s Berry Breakfast Bars
- eggs
- quick oats
- baking powder
- 99% fat-free plain yoghurt
- lemon zest
- pure maple syrup
- unsweetened almond milk
- vanilla essence
- mixed berries
- ground cinnamon

Add butterfly whisk to bowl then egg whites
30 Seconds | Speed 3.5
- Set aside - these will deflate but just mix together later.

Add all ingredients (except egg whites and fruit)
5 Seconds | Speed 4

Add egg whites and fruit
Either stir through or 5 Seconds | REVERSE | Speed 4
