This recipe was exclusive to Zoom participants and subscribers ONLY but we thought it was too good not to share.

Easy Choc Chip Almond Slice – The Thermomix Way
What's Needed
- Thermomix
Ingredients
- 200 gms Roasted Almonds
- 50 gms Oats
- 3 gms Cinnamon Powder - 1 tsp
- Pinch Sea Salt
- 15 gms Almond Butter - 1 tbsp recipe below
- 40 gms Coconut Oil – THE SOLID ONE – Not liquid - 3 tbsp
- 40 gms Honey - 2 tbsp
- 4 gms Vanilla Paste - 1 tsp
- 30 gms MINI Chic Chips - 3 tbsp Available at Coles
Instructions
- Add Roasted Almonds to TM Bowl and place on lid and MC6 seconds | Speed 5 – Scrape sides200 gms Roasted Almonds
- Add Oats, Cinnamon, Salt5 Seconds | REVERSE | Speed 4 – Scrape sides50 gms Oats, 3 gms Cinnamon Powder - 1 tsp, Pinch Sea Salt
- Add Almond Butter, Coconut Oil, Honey & Vanilla Paste6 Seconds | REVERSE – Speed 5 – Scrape sides15 gms Almond Butter - 1 tbsp, 40 gms Coconut Oil – THE SOLID ONE – Not liquid - 3 tbsp, 40 gms Honey - 2 tbsp, 4 gms Vanilla Paste - 1 tsp
- Add Choc Chips20 Seconds | REVERSE | Speed 230 gms MINI Chic Chips - 3 tbsp
- Empty contents into a lined baking tray and press the slice into place. You may need to apply pressure. If it sticks to your hands, wet them a little.
- Place into the fridge and allow to set for at least 30 minutes. Slice as required.
Notes
For gluten free option, replace Oats with Gluten Free Weetbix
3PP for me per slice - not really WW friendly but oh so tasty!
Almond Butter
Store-bought nut butters often contain additives and preservatives. With a Thermomix, you can make your own creamy and delicious nut butter in minutes. Simply roast your favorite nuts, such as almonds, cashews, or peanuts, then blend them in the Thermomix until smooth. You can customize the flavor by adding a pinch of salt, a drizzle of honey, or even a sprinkle of cinnamon. Homemade nut butter is not only healthier but also incredibly satisfying.

Ingredients
- 200 gms Roasted Almonds
- 1 tbsp Olive Oil Optional
Instructions
- Place Roast Almond into TM Bowl and place lid on bowl with MCBlend 1 minute | Speed 9 – Scrape down the sides
- Blend 30 second | Speed 6Repeat until you are happy with the desired consistency
- Transfer to a jar and store in the fridge
Notes
NOTE: You may notice that the bowl starts to heat up during the blending process due to the friction. Don’t worry about it. This helps to achieve a smooth paste.
If using just almonds (not roasted) add 1tbsp Olive Oil
