Norma Doyle’s Amazing Fruit Cake
Fruit cake? Not exactly my top choice – or so I thought!
When Stephen dropped by and kindly offered us a few slices of his freshly baked fruit cake, I hesitated, replying, “Chris will adore it, but, well, it’s not my personal favorite. Actually, I don’t really care for it.” Stephen, with a grin, encouraged me, saying, “Just give it a try.” So I did. Oh, my goodness – it was absolutely divine! Wonderfully light, bursting with a fresh and fruity flavor – simply scrumptious. I couldn’t get enough of it. As for Chris, he hardly got a chance to taste it.
I approached Stephen, asking if I could share this newfound gem with all of you, to which he agreed, provided that his dear Mum remains the rightful owner of the cherished recipe. Family recipes are priceless treasures, and they deserve to be shared. I wanted to spread the joy of this delectable treat with everyone.

Thermomix Light Fruit Cake - Norma Doyles Recipe
What's Needed
- Thermomix
- Oven
- 20 cm Cake Tin
Ingredients
- 200 gms Brown Sugar
- 240 gms Water
- 375 gms Mixed Dried Fruit
- 125 gms Self Raising Flour
- 125 gms Plain Flour
- 1 tsp Nutmeg
- 1 tsp Bi-Carb Soda
- 250 gms Butter
- 2 Eggs
Instructions
- Grease and line a 20cm cake tin
- Add flours and sift5 seconds | Speed 8 - set aside125 gms Self Raising Flour, 125 gms Plain Flour
- Place sugar, water, fruit, nutmeg, bicarb soda and butter into TM bowl and place on Simmer Basket6 minutes | 110 degrees | Speed 1200 gms Brown Sugar, 240 gms Water, 375 gms Mixed Dried Fruit, 1 tsp Nutmeg, 1 tsp Bi-Carb Soda, 250 gms Butter
- Allow to cool for 5+ minutes
- Preheat oven to 160 degrees
- Add eggs and sifted flour2 Eggs
- 20 Seconds | Speed 3
- Final mix with spatula to make sure everything is combined
- Pour into cake tin
- Bake at 160 degrees for 1 hour (50 mins if Fan Forced)Insert skewer to checked to see if it is cooked
