Anna's Recipe Converted to Thermomix

Tuna is my absolute favorite, and when it comes to tuna dishes, Tuna Patties take the crown. I mean, who wouldn't love them? They bring together the goodness of tuna and mashed potatoes, which, in my opinion, is a winning combination!

I've been a fan of Anna Van Dyken's tuna patties ever since I first tried them. But, as anyone who knows me can attest, when it comes to convenience, it has to be Thermomix all the way. So, I took the liberty (she always knows of course) of converting her recipe to a Thermomix version for a quick and effortless meal.

Old Fashioned Tuna Patties

What's Needed

Ingredients
  

  • 1 small Onion
  • 1/4 Cup Fresh Parsley
  • 1 Lemon Peel Whole Lemon no white pith
  • 1000 mls water I like to flavour with stock paste
  • 240 gms RAW Spud Lite or Carisma Potatoes
  • 425 gms Tuna in Spring water Well Drained
  • 1 Egg
  • 1/2 Cup Panko Breadcrumbs
  • 2 Tsp Dijon Mustard
  • 1/2 Lemon Juice - half the lemon
  • Salt & Pepper To Taste
  • 2 x 3 Second Oil Spray

Instructions
 

  • Add onion, parsley, lemon peel to TM bowl
    Place on lid and MC
    10 seconds | Speed 7
    Scrape the sides of the bowl and repeat if necessary. I like mine FINE
    Set aside to small bowl
    1 small Onion, 1/4 Cup Fresh Parsley, 1 Lemon Peel Whole Lemon
  • Without rinsing the bowl and add water
    1000 mls water
  • Add potato to simmer basket - put on lid - NO MC
    20 minutes | Varoma | Speed 4
    240 gms RAW Spud Lite or Carisma Potatoes
  • Drain and returned potatoes to the TM bowl
  • Insert butterfly whisk and blend for 10-15 seconds | Speed 4
  • Remove whisk
  • Add broken up tuna, egg, onion/parsley and lemon zest mixture, breadcrumbs, mustard and lemon juice.
    425 gms Tuna in Spring water Well Drained, 1 Egg, 1/2 Cup Panko Breadcrumbs, 2 Tsp Dijon Mustard, 1/2 Lemon Juice - half the lemon, Salt & Pepper To Taste
  • Mix 30 seconds | REVERSE | Speed 3 - repeat if not mixed enough
  • Form into 8 patties
  • Spray a non stick oven proof pan with Olive Oil Lightly brown on both sides and then place into an over at 180c for 8-10 mins to cook through.
