Even before I acquired a Thermomix, Anna’s recipe had already become one of my top choices for its simplicity and quick preparation. I used to whip up two batches, enjoying one immediately and stashing the other for a convenient “lazy” night.

Anna’s recipe is incredibly versatile. Whether for lunch, a picnic snack, or a hearty dinner paired with vegetables, it seamlessly fits into any mealtime. Few dishes can boast such adaptability, and this one certainly delivers, being both satisfying and delicious.

Upon getting my Thermomix, I was convinced that this recipe would easily adapt to even more straightforward cooking.

Anna's Cheesy Rice Slice

  • Thermomix
  • Bowl
  • Oven
  • Baking dish

Ingredients
  

  • 1 1/2 cups cooked brown rice or white
  • 3 eggs beaten
  • 2 tsp garlic oil normal works fine
  • 12 gms Parmesan cheese
  • 60 gms Bega 50% less fat cheese
  • 1 red onion
  • 1 med/large zucchini
  • 1 tsp masterfoods Tuscan seasoning
  • Salt & Pepper

Instructions
 

  • Firstly - Cookidoo - Boiled Rice and cook 255g - set aside to cool
  • Preheat oven to 180 degrees Celsius (360 F)
  • Make sure TM bowl is clean and dry before continuing
  • Add Parmesan - 12g & Cheddar - 60g to TM bowl - add lid and MC
    12 gms Parmesan cheese, 60 gms Bega 50% less fat cheese
  • 5 seconds | Speed 7 - Set aside to small bowl
  • Add red onion & zucchini to TM bowl - add lid and MC
    1 red onion, 1 med/large zucchini
  • 3 seconds | Speed 5 - Scrape down the sides
  • Add lightly beaten eggs
    3 eggs beaten
  • Add back to the bowl cheese, oil, Tuscan seasoning and rice to TM bowl - add lid and MC
    1 1/2 cups cooked brown rice or white, 2 tsp garlic oil, 1 tsp masterfoods Tuscan seasoning, Salt & Pepper
  • 20 seconds | REVERSE | Speed 4
  • Pour into a baking dish
  • Bake in a oven for 35-40 mins or until cooked & golden
