Anna’s fantastic Crustless Quiche.

We love Quiche in our family. Egg and Bacon pies. Store bought quiche – all those yummy but oh so bad for you dishes.

Anna’s quiche is none of those things. It’s healthy and tasty, so of course I wanted to make it again – and again – and again. Freeze if for a quick meal. Eat it cold for lunch the next day. It’s just a winner in this house.

Of course I needed to be able to make it in my Thermomix. So I did just that. Here are the instructions.

Ingredients
  

  • light Jarlsberg cheese
  • 97% fat-free honey ham
  • semi-dried tomatoes (not in oil)
  • baby spinach
  • broccoli I used cauliflower
  • fresh flat-leaf parsley
  • chopped fresh thyme leaves
  • diced butternut pumpkin
  • eggs
  • reduced-fat milk
  • 97% fat-free cottage cheese
  • self-raising flour

Instructions
 

  • Preheat oven to 180° C
  • Lightly spray a 23cm square deep ovenproof dish with oil. Line base and sides with baking paper
    HINT: Wet baking paper and shake dry to shape to pan
  • Cheese into TM Bowl - 6 SECONDS | SPEED 6 - set aside

  • Add into TM Bowl
Eggs, Milk, Cottage cheese, Self-raising flour & Flat Leaf Parsley & Thyme - 10 SECONDS | SPEED 5
  • Put cheese back into TM bowl
Add diced ham, sun-dried tomatoes, broccoli - 6 SECONDS – REVERSE – SPEED 3

  • Add Diced (1cm no bigger) pumpkin to the baking tray and pour TM bowl contents into dish and spread evenly Bake for 30-35 minutes
