Anna Van Dyken converted to Thermomix

 

Once again Anna has outdone herself with flavourful Mexican Chicken Meatballs. I love all her meatball recipes and these are TASTY!

These were perfect for the weather. The recipe says oven, I say Thermomix steaming and it was perfect. A quick fry in the fry pan to brown them off, which to me they didn't need, however, I thought let's get a bit of colour on them and I tossed them through the salad. Perfection.

I did use Thermomix homemade Taco seasoning. So much better than store bought - in my opinion. You can add as much or as little chilli as you like, and my family - a lot!

Cheese and Bacon Rolls - Plain

Anna’s Chicken Mexican Meatballs

Makes 25 small meatballs

  • Thermomix
  • Fry Pan
  • chicken breast mince
  • red onion
  • garlic clove
  • chopped fresh flat-leaf parsley
  • taco seasoning

Making Mince from Chicken Breast

  1. Partly frozen chicken breast
  2. 10-15 seconds | Speed 6

MEATBALLS

  1. ADD Garlic, Onion, parsley & taco seasoning (thermomix made of course)

  2. 5 Seconds | Speed 5
  3. ADD Chicken mince, MIX 20 seconds REVERSE | Speed 4

  4. PLACE Mixture into bowl or chopping board

  5. RINSE BOWL WELL
  6. ADD 1 litre of water, Place on lid to TM bowl

  7. ADD Varoma Dish

  8. Make the meatballs leaving room for steam. Use tray also

  9. COOK 20 minutes | Varoma | Speed 1

  10. When cooked. Put the meatballs into fry pan to brown them off.
