WOW. Just wow. This was so tasty and filling. We loved it and soup is always a winner in this house!
NOTE: This will shred your chicken as it cooks. If you want chunks of potato, remove MC and place through the hole in the lid put them in 2 hours before the end of cook.
DO NOT STOP THE THERMOMIX – this will start it turning again regularly.
If you want it chunkier, and you own a blade cover – use that. I like mine all mashed up 🙂

- Thermomix

Ingredients
- skinless chicken breasts
- Chicken Stock
- small brown onion
- celery stick
- low-carb potatoes
- garlic clove
- cans corn kernels
- short-cut bacon
- chopped fresh chives
Instructions
- Add garlic, onion and celery to TM bowl. Add lid and MC. 5 seconds | Speed 6
- Add all ingredients EXCEPT chivesskinless chicken breasts, Chicken Stock, small brown onion, celery stick, low-carb potatoes, garlic clove, cans corn kernels, short-cut bacon
- Dice the chicken into large chunks
- Slow Cook Mode: put on lid and MC
- 5 hours – 95 degrees
Notes
This will shred your chicken as it cooks. If you want chunks of potato, remove MC and place through the hole in the lid put them in 2 hours before the end of cook.
DO NOT STOP THE THERMOMIX - this will start it turning again regularly for another hour.
If you do prefer a chunkier soup, and you own a blade cover, put this in and you won't have shredded anything.
