MEAL PLANNING FOR MAY - I’m pleasantly surprised by my progress in Meal Planning for May. There are a couple of factors contributing to this:
Firstly, I recently received my 5kg loss chip at my WW Meeting last Wednesday and it has really motivated me to stay on track and continue seeing results. Despite my current back issue, (I get sciatica) which has limited my mobility, I am really motivated to do more! However, this setback actually provided me with an opportunity to plan ahead.

For this month, I’ve revisited some favourite recipes from last month and I’m exploring more recipes from the WW Website, intending to adapt some for Thermomix to streamline my cooking process.

One of the greatest perks of WW (Weight Watchers) is its inclusive approach to food. There are no forbidden items on the menu. Snacking isn’t confined to just “rabbit food”; it’s about finding balance. Website has full list.

My late-night snack cravings are notorious—I crave something crunchy and savoury. I used to stand in the kitchen, staring into the pantry or fridge, pondering what to eat. However, armed with a list of ‘point-friendly’ options, the decision-making process has become much simpler.

My snack cupboard is meticulously organised by points, (yes that’s me) making it easy to grab the right choice at any given time. Sure, there are occasional “GIVE ME CHOCOLATE” moments, but they’re rare. I’ve always been the type to make a block of chocolate last for weeks, only having a piece or two at a time. However, if my family found it, it would vanish in an instant! Sweet treats aren’t really my weakness. But give me a bag of potato chips, grain waves, Bhuja Mix, or something similar, and I’ll devour it in one go. That craving still persists, even now.

Chris is a godsend when it comes to shopping (a task I dread unless it’s online). He navigates the aisles with the WW App on his phone, scanning products to find what fits my plan and what doesn’t. He’s a lifesaver during my 10 pm snack emergencies.

Meal Plan Day 23 - Turkey Chilli Mac & Cheese by @pointedkitchen - 6 WW Points - Wow 🤩 this is so tasty and good. It’s got spices and amazing flavours. I paired it with a salad and light sour cream for me. I’m not much of a “spice girl” so I needed it, however I think I did the recipe wrong. I think I put in 1 tbsp of cayenne pepper not a teaspoon. Oops 😬 oh well. Chris loved it

Make sure you have all your ingredients set out before you start the cook as there are a few steps to it. I split the dish into 3 servings to eat over 3 different nights. I reheated the meal by popping it back into a frypan on medium heat with a splash of water so I could mix it easily.

Highly recommended meal.

Simple; Easy; Quick; Delicious 😋 This meal was yummy. After a long day at work, it was cooking start to finish - 20 minutes. Such a perfect dish.

I added vermicelli noodles as I didn’t get time for lunch-don’t judge and wanted a fill me up. It was crunchy and satisfying

Omg I went off plan tonight and ended up making Pasta with rosemary-roasted vegetables and feta from the WW App. WOW 7 points and so filling.

I went to my neighbours this lunchtime and they were having beautiful fragrant pasta so I decided to change tonight’s dinner. I came home and went through the WW APP and found this. The recipe I have printed for TWO people. Not one as the app is. I thought a Chris deserved dinner too 😝

I added onions to the oven platter and sliced some mushrooms and sautéed them in pasta water, added the cooked pasta and then the oven roasted veggies. I also added about a cup of pasta water for a little “sauce”. Sprinkled over the feta and ooohhhh so good. Seriously. It’s SO GOOD!!
