The Perfect Bread for two in a Thermomix

We have a fondness for delightful bread, and many of the recipes in my Thermomix result in large family-sized loaves, with the remnants often becoming a treat for the birds.

Determined to create a more modest loaf tailored for two, I embarked on the challenge, and the outcome is fantastic. It’s a loaf that’s wonderfully light, fluffy, and just the right size.

While our love for bread is undeniable, I’m mindful of not overindulging. This loaf is perfect for us—ideal for breakfast toast, lunch sandwiches, or any time we crave a delicious slice without the temptation of excess.

Do I class this as a WW bread. I do. Why? I am a lover of bread and if I am going to eat it I want something worthwhile and tasty. This might be 3 points per slice but it is worth every mouthful. I would prefer to just avoid cheap tastless bread.

What's Needed

  • Thermomix
  • Bowl
  • Bread tin/Muffin tin
  • Oven
This bread is a no fail for me. I have made many different sorts. Some success. Some failures. What I love about this is the size. It is just perfect for two people. Small Loaf

Ingredients
  

  • 430 gms Bread flour
  • 245 gms Water
  • 20 gms Vegetable or Olive Oil
  • 7 gms Dried Yeast
  • 6 gms Sea Salt
  • 6 gms white Sugar

Instructions
 

  • Add Water, yeast and sugar to tm bowl - put on Lid and MC
    245 gms Water, 6 gms white Sugar, 7 gms Dried Yeast
  • 2 minutes | 40 degrees | Speed 2
  • Let sit for 3 minutes.
  • Add Oil, flour and add salt LAST
    Salt and yeast are NOT friends - putting them together will kill the yeast.
    430 gms Bread flour, 20 gms Vegetable or Olive Oil, 6 gms Sea Salt
  • Knead 2 minutes
    DO NOT LEAVE MACHINE UNATTENDED - they move!
  • Proof in the TM bowl - 30 minutes.
  • Grease a loaf tin first with a knob of butter followed by ½ tsp of vegetable oil. This stops the sticking and makes a lovely crust.
  • Turn out dough (good luck) onto a lightly floured surface.
  • Gently shape into a loaf of bread doing the envelope ✉️ fold
  • Put into bread tin (similar size to a banana loaf tin), lightly dust with flour and cover with tea towel and leave sit in a warm place for 30 minutes.
  • 10 minutes before the end of the proofing set oven to 170 (fan forced) or 180
  • Bake for 30 minutes. Turn the tin around at 20 minute mark.
