Many of you are familiar with Anna Van Dyken. A very dear friend of ours and owner of Feed Me Healthy, Author and WW Ambassador. Many of the recipes that we convert are Anna’s. Her books are amazing for scrumptious meals and also brilliant for WW and weight loss which I am actively participating in.

Chicken Rice soup - Serves: 6 - 5 WW POINTS

The is a new recipe - Chris wasn’t feeling well today so I decided to make a soup that would be gentle on the tummy while still be filling. The result was a delicious bowl of yummy 😋 

* 1 tablespoon olive oil 
* 1 onion chopped
* 3 large carrots peeled and diced
* 3 sticks celery diced
* 1 teaspoon garlic minced
* 1 teaspoon parsley
* 1 teaspoon salt
* ½ teaspoon thyme leaves
* ⅛ teaspoon black pepper
* 8 cups chicken stock
* 2 skinless chicken breasts uncooked
* 1 cup rice

Instructions
* In a large pot, heat oil over medium-high heat. Add onion, carrots, and celery and cook and stir for 3-4 minutes, until onion begins to turn golden.
* Add garlic, parsley and thyme and cook 1 minute.
* Add salt and pepper, stock, rice. Stir. Add rice and bring to a boil over medium-high heat.

* Reduce heat to medium-low and cover. Simmer for 40 minutes, stirring every 10 minutes, or until vegetables and rice are tender.

* Remove chicken from pot and shred. 
If you have a thermomix, cut chicken into chunks. Put on TM LID - 5 seconds | REVERSE | Speed 4
* Add chicken back to the pot. check salt and serve.

Weekly weigh in and I have had a gain again. 😡
+200gms. 🤷🏼‍♀️ all but one day I was so spot on with tracking and being conscious of what I was eating. Gosh I even walked over 16,000 steps on day. I dunno. I think there is just so much going on with WW, work, life!!!

Oh what a week. I think I forgot I was doing WW. Gained 400gms 😩 Dinners out a few times, icecream for desserts and potato chips for snacks does not constitute good nutritional food. Tasted good though 😉😂

I realised today that my weight today is the same as I was on the 30-07-24. I got really down on myself for about 5 minutes and then realised that I have been away on a wonderful holiday and relaxed. If not for WW mindfulness it could have been a lot higher!!

For those upset on the closure of workshops-me too -but just remember YOU are the one that started this journey and only you can continue it. Start your own workshop. That’s what I am thinking of doing.

WWs Creamy Chicken & Mushroom Hotpot. 🏆 this is our favourite WW recipe. So tasty. So filling. So delicious. 3WW Points PLUS whatever you serve it with. Highly recommended

Olive oil 2 tsp
Eschalot(s) 3 whole, thinly sliced
Celery 1 stick(s), stick, thinly sliced
Shortcut bacon90 g, (Buy 100g), fat trimmed, chopped
Skinless chicken breast 400 g, cut into 3cm pieces
Mushrooms 200 g, button variety, halved
Salt reduced chicken stock 1 cup(s), (250ml)
Reduced-fat evaporated milk ¼ cup(s), (60ml)
Fresh thyme 1 tbs, plus extra sprigs to serve
Cornflour 2 tsp

Heat oil in a large deep non-stick frying pan over medium–high heat. Cook shallot, celery and bacon, stirring, for 5 minutes or until softened. Add chicken and mushroom and cook, stirring, for 5 minutes or until chicken is browned.

Stir in stock, evaporated milk and thyme and bring to a simmer. Simmer, uncovered, for 10 minutes or until chicken is cooked.

Combine cornflour and 1 tablespoon water in a small bowl. Add to chicken mixture and stir to combine. Simmer for 2 minutes, stirring, until sauce has thickened. Serve with extra thyme sprigs. 

We add mash potatoes and green beens

I feel like I’m going around and around, up and down and back again. My body seems to like 72.9kg. 

I have been hovering around this weight since the end of July. What can I do to change things up.

Well I will say I’m certainly happy with this weigh in. When I got home from Bali I had put on 1.2kg 😳 I think it was mostly fruit smoothies which I had probably 2-3 a day and I don’t handle heat very well so I swell. Yes I drank heaps of water every day but oh well, I had a wonderful trip and it was worth every gram. 

Weight before I left for Bali - 72.7kg
Weight when I got home. Last Wednesday - 73.9kg
Weight today - 72.8kg

So overall a gain of 100grams in 3 weeks. I can deal with that ☺️
