This week’s weigh in was finally above my standard loss. It was -400gms bringing my total weight loss so far to 7kg!
What did I do differently this week - WATER💧
I made sure I drank at LEAST 2 litres a day if not more and it has made a difference which is fantastic to me. Exercise still evades me 🤔 or do I evade it. I think I do know the answer to that somehow 🤣
Very happy with my progress so far. Have I “suffered” on WW. No way. I still have my treats of desserts, just WW desserts and you know what. For me who was a crazy eater of a night time - I have noticed a change. Because I am eating nutritious meals throughout the day, I don’t crave of a night. Winner for me 🏆

Spicy Oven Baked Chicken Thighs (3 WW Points)
Or Breast (0 WW Points) No oil needed. Full of flavour and delicious.
My total meal was 3 points which was for my homemade chips. Baked in the oven with the chicken. Freshly steamed pumpkin and Brussel sprouts
500gm chicken thighs or breast
1/2 tbsp garlic powder
1/2 tbsp onion powder
1/2 tbsp smoked paprika
1/2 tbsp baking powder
1/2 tsp mixed herbs
1/2 tsp Salt (optional - I don’t use it)
1/4 tsp Black pepper
1. DRY your chicken thighs (very important!)
2. Mix your seasoning
3. Spread evenly all over chicken thighs and let it sit for at least 30 minutes (to overnight) and allow the chicken to get to NOT be fridge cold before baking.
4. Place the chicken on an OVEN RACK with a lined baking tray underneath.
5. Bake at 220C for 20-25 min (35-40 min if using bone-in chicken) in the MIDDLE of the oven.
6. Let it REST for 5 minutes before serving

Slow Cooker Creamy Chicken Satay - 6 WW Points
In days gone by my family used to love a packet mix “Creamy Malaysian chicken Satay” but you can no longer get it so I decided I was going to try and make it. Well I fiddled the flavours and got my dish!! So excited. It tastes almost the same but just a hint more heat with the chilli - love it 🥰
Prep time 10 mins
Cook time 4 hours
Serves 4

- 500g chicken breast cubed
- 270 ml light coconut milk
- 100 ml light milk
- 2 tbs light soy sauce
- 1 tbs garlic
- 2 tsp ginger
- 1.5 tbs Malaysian/Babas curry powder (normal powder if you don’t have it)
- 1 red chilli - deseeded OR 1 tsp chilli powder
- 1 chicken stock powder
- 60 g peanut butter
- 200 g capsicum strips
Add all above ingredients to slow cooker and stir. Set on high for 4 hours
1/2 hour before end of cook add
- 2 tbs cornflour + 2 tbs water (mixed together) stir through
- 200 g snow peas - leave sit on top to just heat through
Serve with rice. 4 WW Points. 1/2 cup - I freeze my rice that’s been cooked in my thermomix and portion out what I need. I make egg rice.
Beat 2 eggs and pour into fry pan - no oil
Place 1.5-2 cups frozen rice - stir until hot. Serve

The flavours are incredible. A little spicy with a slow burn. I did cut back on the hot sauce but the rest of the recipe is the same. Totally worth it. We paired it with roast potatoes carrot and pumpkin with silverbeet and peas and corn. Yummo
I personally would cook it for another two hours to just push it over the edge but how it was great. Highly recommended.

2 Point Dinner tonight was delicious. Another slow cooked meal from Wholesome By Sarah. Not WW but I put it into the app and it’s 2 WW Points for the whole bowl. So tasty and a little spicy 🌶️ yum
The recipe calls for wraps to be put in it and I left that out and I didn’t put the cheese on top. I also added 2 cups of cooked rice 1/2 hour before servicing. That was the only thing that I needed to pointed for WW

Not only are Chris & I on WW but now that Max (our fur baby) has been diagnosed with insulin dependant diabetes, he is also on a low fat-low carb diet. Nothing like “keeping it in the family”
