I had the pleasure of making my granddaughters first birthday cake for her party today. Daisy’s are my favourite flower and do make this cake for Sofia was so much fun. The day was lovely with all the family and friends there. Sofia loved her cake too 🎂
The cake was a @funkybatter Lemon cake with battercream icing. I must say, Lemon is my absolute favourite flavour. It started off rocky as I have somehow Iost a lot of my cake tools. After baking Elizabeth and Billy’s wedding cake they have just gone!! We tore the house apart looking for them but they are just not here. Getting the cake level on the top was super hard but I got there in the end. It all worked out fine - in the end

First real weigh-in after two months, and it’s back to business! It’s been a bit of a rollercoaster—up, down, up, down—but here we are, down 300g. I’ve watched the daily and weekly fluctuations without much change, but honestly, it could have been much worse. With birthdays, weddings, stress, outings, and plenty of food, I’m happy to take that 300g loss as a win!

Of course the main source was @funkybatter amazing recipes for the cake and battercream. Honestly they are THE BEST recipes. The cake would not have survived the trip to Torquay had it not been made in these. The battercream held up perfectly in 28 degree heat. 👌🏼
The cake topper by @eventstobeau was perfection. Just was the couple wanted. Simple and elegant. It arrived beautifully packaged and it will be something they can treasure in a frame. Highly recommended

Dinner tonight was an absolute winner—just 8 WW points and worth every bite! I came across this recipe while doom-scrolling one night and thought, YUM! So, I gave it a go with a few tweaks—swapped in light cream and used only 2 teaspoons of butter instead of tablespoons. It probably would have been even creamier, but honestly, it was plenty creamy for me! Super delicious, quick (only 30 minutes to cook!), and definitely one I’ll be making again. Total win! Recipe in photos and sorry I can’t credit anyone for it. I didn’t get that part.
I know I’ve been a bit MIA lately—sorry about that! Life has been non-stop with work deadlines and my daughter’s wedding coming up in just over three weeks. Meal planning and prep have gone out the window, and it’s been all about quick meals and eating out.

Crispy flathead fillets, lightly dusted with flour and seasoning, shallow pan-fried to perfection. Paired with crunchy air-fried chips and a fresh, vibrant salad made from lettuce, cucumber, homegrown tomatoes, chickpeas, and avocado.
The finishing touch? A drizzle of our favorite @fustinisholland balsamic vinaigrette, brought back from Michigan by the kids each year. It’s so good we use it sparingly, but it absolutely makes the meal!

2 WW Points plus whatever you put them with. I paired it with Nasi Goreng rice - 7 points
Crunchy, tasty, juicy and irresistible - my favourite way to have salmon these days. 10 minute cook and you’re eating a beautifully cooked salmon.
For the salmon
4 salmon fillet , thickest cut if possible, skin removed, cut into equal-sized cubes (about 1-inch)
1/2 tsp garlic powder
1/4 tsp ground ginger
kosher salt or sea salt , to taste
cracked black pepper , to taste
For the sauce
1/4 cup coconut aminos , you can also sub with gluten-free tamari or low-sodium soy sauce if you’re not gluten-free.
3 tbsp honey , you can also use maple syrup or any other sticky liquid sweetener of your choice (for a lower sugar or lower carb option, you can opt for sugar-free maple syrup or allulose etc.)
1 tsp sesame oil
1-2 tsp Sriracha , or preferred hot sauce, to taste or omit if you’re sensitive to spice
1 tsp rice wine vinegar or 1/2 tsp apple cider vinegar
I serve this with rice. Sometimes plain, sometimes Nasi Goreng. All dependant on the mood of the cook 😝
