Slow Cooker Thai Peanut Chicken – absolutely delicious! I can’t recommend it enough. It’s 9 WW points and honestly, worth every single bite.
I used lite coconut cream and about 200g of peanut butter, but next time I’ll cut the peanut butter back a bit—it was a little thick for my taste.
I tossed in some red capsicum this time, but next round I’ll be adding broccoli and snow peas for extra colour and crunch. Definitely give this one a go!

Just finished making Smitty`s Melbourne Storm ⚡️ birthday cake and I`m so happy with how it turned out!
Using @funkybatter`s recipes, I created a Cookies & Cream cake with Dark Chocolate Ganache and battercream. The ganache was a revelation - the flavour was out of this world!
Smitty was overjoyed with his surprise cake and everyone raved about it. I love making cakes, it`s a labour of love that`s both calming and rewarding.

I had the joy of making this beautiful Sunshine cake for my daughter’s friend, Danielle, to celebrate a very special day—her son Elijah’s first birthday and Christening, all in one! Talk about smart parenting!
My daughter Elizabeth had the honour of being his Godmother for the occasion.
The cake itself was a Funkybatter creation—vanilla with a decadent Biscoff and Koko Black dark chocolate shard center, all wrapped in luscious Funkybatter battercream. It was inspired by Elizabeth & Billy’s wedding cake, which Danielle and Deon absolutely loved!

Meticulous planning for just the right size without too much was the task at hand. Flavour choices were made. Vanilla cake with @lotusbiscoffus centre and dark chocolate shavings of @kokoblackchocolate
Of course the main source was @funkybatter amazing recipes for the cake and battercream. Honestly they are THE BEST recipes. The cake would not have survived the trip to Torquay had it not been made in these. The battercream held up perfectly in 28 degree heat. 👌🏼
The cake topper by @eventstobeau was perfection. Just was the couple wanted. Simple and elegant. It arrived beautifully packaged and it will be something they can treasure in a frame. Highly recommended

Dinner tonight was an absolute winner—just 8 WW points and worth every bite! I came across this recipe while doom-scrolling one night and thought, YUM! So, I gave it a go with a few tweaks—swapped in light cream and used only 2 teaspoons of butter instead of tablespoons. It probably would have been even creamier, but honestly, it was plenty creamy for me! Super delicious, quick (only 30 minutes to cook!), and definitely one I’ll be making again. Total win! Recipe in photos and sorry I can’t credit anyone for it. I didn’t get that part.
I know I’ve been a bit MIA lately—sorry about that! Life has been non-stop with work deadlines and my daughter’s wedding coming up in just over three weeks. Meal planning and prep have gone out the window, and it’s been all about quick meals and eating out.
