I’ve been a fan of Anna Van Dyken’s tuna patties ever since I first tried them. But, as anyone who knows me can attest, when it comes to convenience, it has to be Thermomix all the way. So, I took the liberty (she always knows of course) of converting her recipe to a Thermomix version for a quick and effortless meal.

Skipped the Friday night meal plan because we went out for dinner… I did manage a solid WW choice with grilled barramundi, but seriously—why do pubs insist on putting chips on your plate no matter what? You can’t ignore them! 😅

Tonight, though, dinner was back on track with Anna’s Chicken Mango Salad with Citrus Dressing—and as always, it did not disappoint. That dressing is absolute heaven 👌🏼 Super fresh, super tasty… everything you want on a warm summer night! ☀️🥗

✨ Side note: We’ve just booked Bali for August/September this year—3 weeks of pure relaxation. Can’t wait! 🏝️✈️ I have Noosa at the end of the month too (it is a business trip with a little bit of fun thrown in 😉)
